Chili Marinated Double Cut Pork Chops Recipe

  • 3 x fresh whole jalapenos
  • 1 c. fresh cilantro leaves
  • 1 c. chopped onions
  • 2 Tbsp. minced garlic
  • 6 x limes juiced
  • 4 c. vegetable oil Salt to taste
  • 16 x double-cut pork loin chops
  • 4 x resealable plastic bags - (1 gal size)

Directions

  1. In a food processor with a metal blade, combine the jalapenos, cilantro, onions, garlic, lime juice and vegetable oil. Process till smooth. Season with salt.
  2. Season each chop with salt. Place 4 chops in each bag. Pour a quarter of the marinade into each bag of chops. Chill for at least 12 hrs.
  3. Preheat the grill. Remove the chops from the bags, reserving the marinade. Allow the chops to come to room temperature. Place the chops on the grill and cook for 6 to 8 min on each side for medium. Baste often with the reserved marinade.
  4. Remove from the grill and rest for 5 min before serving.
  5. This recipe yields 16 servings.
