  • 1 lb grnd chuck - (to 1 1/2 lbs) browned, liquid removed well
  • 2 can diced tomatoes with juice - (14 ounce ea)
  • 1 can tomato paste - (6 ounce)
  • 1 pkt taco seasoning mix
  • 2 tsp grnd cumin
  • 1 can beans - pinto w/jalapenos, black, etc. - (15 ounce)
  • 1 c. frzn corn kernels (or possibly a 16-ounce can whole kernel corn, liquid removed)
  • 1/2 c. minced green pepper
  • 2 Tbsp. instant tapioca
  • 1 pkt deluxe type macaroni and cheese or possibly shells and cheese Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Combine first 9 ingredients in a 3 1/2-qt or possibly larger crock pot; cover and cook on LOW 6 to 8 hrs.
  2. Cook macaroni and cheese according to package directions and combine with crock pot mix (may need a separate large bowl). Add in salt and pepper as desired.
  3. This recipe yields 6 to 8 servings.
