Ingredients

  • 2 lbs extra lean boneless pork in 1" cubes from leftover pork roast OK
  • 1 lb boneless beef chuck (leftover steak OK) in 1" cubes
  • 1 lrg green pepper seeded and minced
  • 2 pcs cloves garlic chopped
  • 1 can whole tomatoes (28 ounce) mashed
  • 1 can Ro-Tel tomatoes
  • 1 can tomatoes (14 ounce)
  • 1 can green chili peppers (4 ounce) liquid removed, seeded and minced or possibly use already minced
  • 1/3 cup. minced parsley or possibly 2 tbsps. dry
  • 1 tsp sugar
  • 2 tsp cumin seed or possibly 1 tsp grnd
  • 2 whl cloves or possibly 1/8 tsp grnd
  • 1/2 cup. beef broth
  • 1 tsp beef bouillon
  • 1 tsp Worcestershire sauce
  • 1 lrg can red kidney beans
  • 1 can black beans
  • 1 cup. frzn corn
  • 2 Tbsp. tomato paste
  • 1/2 cup. Minute rice

Directions

  1. Combine all ingredients in crockpot, stir thoroughly, cover and cook on low for 8-10 hrs.
  2. Before serving, taste for seasoning and add in salt and more cumin if needed.
  3. Served with lowfat sour cream & salsa rolled in tortillas.
