Chile Relleno Bake

Ingredients

  • 1/2 pound each pork and lean grnd beef (or possibly 1 pound grnd beef)
  • 1 lg. onions, minced
  • 1 clove garlic, chopped
  • 2 (4 ounce.) cans whole chilies, liquid removed and seeded (or possibly 1 7-ounce. can)
  • 2 c. sharp cheese, shredded
  • 4 Large eggs
  • 1/4 c. flour
  • 1 1/2 c. lowfat milk
  • 1 teaspoon salt
  • 1/4 to 1/2 teaspoon Tabasco sauce

Directions

  1. Brown meat; add in onion and garlic and cook. Line 8 inch square baking pan with half the chiles. Top with half the cheese. layer on all the meat mix. Cover with remaining chiles. Beat Large eggs and flour together till smooth; add in lowfat milk, salt, and Tabasco. Pour over meat and sprinkle with cheese. Bake at 350 degrees for 45 min or possibly till a knife comes out clean when inserted in center. Let stand 5 min before cutting.
