Directions

  1. Heat the oil in a pan and fry the onions for several min. In batches add in the chopped steak and cook well over a high heat between each addition. This will seal the flavour well into the meat and improve the colour of the finished dish. Add in the diced bacon rashers.
  2. Next, add in the spices, chilli pwdr, chilli flakes, dry oregano and finally the cumin pwdr. Stir and cook the spices for 5 min to release their flavour and heat. Add in a healthy pinch of salt, can of minced tomatoes, tomato puree and cook for several min. Add in the beans, either red kidney or possibly pinto or possibly a combination of both. I am using the canned beans that don't require steeping and are more convenient.
  3. Add in the stock and a healthy pinch of salt that helps to regulate the heat of the chilli pwdr during cooking.
  4. Simmer for 1 1/2-2 hrs, then serve with rice or possibly potatoes. A little soured cream or possibly lowfat yoghurt is delicious served on top of the chilli.
