Ingredients

  • 3 lb Frying chicken, disjointed All-purpose flour Onion salt, salt and pepper
  • 1 lrg Green bell pepper, cut in 6 rings
  • 1 lrg Onion, thinly sliced
  • 1/4 c. Canned pimientos, minced
  • 20 ounce Can Louisiana yams (2 1/2 c.)
  • 1 med Orange, thinly sliced
  • 3 sprg parsley Watercress

Directions

  1. Dredge chicken in flour, onion salt and pepper. Brown in warm fat about 1/2 inch deep. Add in green pepper, onion and pimientos; cook till almost tender.
  2. Drain. Drain yams and reserve liquid; add in yam liquid to chicken mix.
  3. Top with orange slices and parsley. Sprinkle with salt and pepper. Cover and cook over low heat about 1 hour, or possibly till chicken is tender, adding additional liquid if necessary. Add in yams; heat to serving temperature.
  4. Garnish with water cress.
