Ingredients
- 4 skinless boneless chicken breast halves
- 3 tbsp. butter
- 1 sm. onion, chopped
- 2/3 c. heavy cream
- 1/2 c. white wine
- 1/2 c. marinated sun dry tomatoes in extra virgin olive oil & herbs, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon marjoram
Directions
- Heat butter in heavy skillet. Saute/fry chicken in butter over moderate heat, till cooked through, about 7 to 8 min. Remove chicken from skillet. Add in onions to skillet, cook about 1 minute. Add in cream, salt, and pepper, wine, marjoram and chopped tomatoes. Simmer over moderate heat and cook uncovered, stirring occasionally, till sauce thickens, about 5 min. Return chicken to skillet and simmer, coating chicken with sauce till heated through, about 3 min. Serves 4.
