Directions

  1. In a large skillet, saute/fry onion and green pepper in butter till tender, 7-10 min. Peel potatoes and slice into thin circles and put circles on top of onion-pepper mix. Salt and pepper generously.
  2. Place breasts on top of potato and pour broth over. Add in more salt and pepper, along with healthy pinch of basil. Cover and simmer till chicken is done, about 15-20 min. Serves 4.
