%20%C2%BC%20cup%20grated%20Parmesan%20cheese%202%20oz%20softened%20cream%20cheese%201%20tsp%20salt%20%C2%BC%20tsp%20white%20pepper%20%20%20Instructions%3C/p%3E%3Cp%3EUsing%20a%20meat%20mallet%20(smooth%20side),%20pound%20each%20breast%20between%20sheets%20of%20plastic%20wrap%20or%20wax%20paper%20to%20%C2%BC-inch%20thickness.%20This%20will%20give%20you%20a%20pretty%20large%20piece%20of%20chicken,%20so%20what%20I%20do%20is%20cut%20each%20pounded-down%20breast%20in%20half%20lengthwise.%20Heat%20a%20large%20skillet%20over%20medium%20heat;%20add%201%20tbs%20of%20the%20olive%20oil.%20Dip%20each%20piece%20of%20chicken%20in%20the%20cream,%20letting%20excess%20cream%20drip%20off,%20then%20dredge%20in%20the%20Italian%20bread%20crumbs.%20You%20will%20probably%20have%20to%20cook%20the%20chicken%20in%202%20batches.%20Place%20chicken%20in%20hot%20skillet,%20browning%20well%20on%20each%20side,%20about%205%20minutes%20each%20side,%20until%20chicken%20tests%20done%20(175%20degrees%20F%20or%20juices%20run%20clear%20when%20you%20cut.%20Add%20remaining%201%20tbs%20of%20oil%20and%20repeat%20browning%20with%20remaining%20chicken.%20Place%20chicken%20on%20a%20platter,%20cover%20and%20keep%20warm%20in%20a%20200%20degree%20F%20oven.%20Wipe%20out%20the%20skillet,%20if%20desired.%20Melt%20the%20butter%20over%20medium%20heat%20and%20add%20the%20garlic.%20Cook%20garlic%20until%20it%20becomes%20fragrant--about%203-5%20minutes--don't%20let%20it%20brown!%20Add%20the%20flour%20and%20blend%20it%20well%20into%20the%20butter/garlic.%20Let%20this%20cook%20about%201%20minute.%20Slowly%20add%20the%20chicken%20stock%20stirring%20constantly%20until%20there%20are%20no%20lumps.%20Slowly%20blend%20in%20the%20cream%20then%20add%20the%20salt%20and%20pepper.%20Cook%20for%20about%205%20minutes.%20Add%20the%20Parmesan%20and%20cream%20cheese%20and%20stir%20until%20the%20cream%20cheese%20melts%20and%20blends%20into%20the%20sauce.%20Pour%20sauce%20over%20chicken%20and%20serve%20immediately.%20Serves%204%20hearty%20appetites,%208%20light%20appetites%20%203.4.3177%3C/p%3E%3Cp%3EYum%3C/p%3E){kind=link}
