Ingredients
- 1 chicken
- 1 doz. corn tortillas
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can (Hormel) chili with beans
- 1 can (Hormel) chili without beans
- 1 med. can of diced Ortega green chilies
- 1 med. onion, diced
- 1/2 pound cheddar cheese
- 1/2 pound Monterey Jack cheese
- 1 can black olives
Directions
- Before mixing ingredients, boil chicken for 1 hour, debone and cut into bite- size pcs. Cut corn tortillas into bite-size pcs. Mix rest of the ingredients into large mixing bowl except cheeses and olives.
- Spread small amount of mixed ingredients into large glass casserole dish. Lay some corn tortillas across bottom of dish, lay some of the chicken pcs on top of tortillas. Spread mixed ingredients across chicken, repeat till all corn tortillas and mixed ingredients are gone.
- Sprinkle cheese across top, lay sliced olives on top. Bake till bubbly at 350 degrees, not longer than 30 min.
