Ingredients

  • 4 Tbsp. Butter
  • 2 c. Bread crumbs, plain
  • 3 x Garlic cloves, minced Salt/pepper
  • 2 Tbsp. Fresh parsley, chopped
  • 1 sm Onion, chopped
  • 2 Tbsp. Tomato juice
  • 1 lb Boneless chicken breast, cut in 3" pcs Pearl onions
  • 2 x Large eggs, beaten
  • 1 1/2 c. Bread crumbs, plain

Directions

  1. STUFFING Heat 4 Tablespoons butter in a large skillet, add in 2 c of bread crumbs and stir over moderate heat till brown. Mix with garlic, salt, pepper, parsley, chopped onion, and tomato juice.
  2. CHICKEN Lb. 3" chicken pcs flat. Put a Tablespoons of bread stuffing on center and roll. Using skewers, alternate chicken roll and pearl onions till filled. Then place skewer in beaten egg and roll in bread crumbs. Saute/fry in oil till cooked on all sides.
