CHICKEN SOUP

This is one of my old-time favorite recipes. It goes without saying, the simpler, the better. Try this simple and appetizing chicken soup...good for the winter season.

Ingredients

  • 1/2 kg. chicken, cut up
  • 1 liter water
  • 1 chicken cube
  • 1 tsp. salt
  • 1/2 tsp. MSG
  • 5 peppercorns
  • 1 egg, beaten
  • CORNSTARCH SOLUTION:
  • 1/4 c. cornstarch
  • 1/4 c. water

Directions

  1. Combine the first 6 ingredients in a saucepan. Simmer for at least 30 minutes or until chicken is tender.
  2. Take out chicken and shred.
  3. Strain soup by colander.
  4. Put chicken and soup in a pan. Simmer for 10 minutes.
  5. Slowly pour in egg, gently stirring.
  6. Thicken soup by cornstarch solution.
  7. Serve with vinegar and chopped green chili.
