Ingredients
- 1 c. minced broccoli
- 1/3 c. minced onion
- 1 clove garlic, finely minced
- 1 carrot, cut into thin strips
- 3 tbsp. vegetable oil
- 2 c. cut-up cooked chicken or possibly turkey
- 1 teaspoon salt
- 2 med. tomatoes, minced
- 4 c. cooked macaroni wheels
- 1/3 c. Parmesan cheese
- 2 tbsp. snipped parsley
Directions
- Cook and stir broccoli, onion, garlic and carrot in large skillet over medium heat till broccoli is slightly tender, about 10 min. Stir in chicken, salt and tomatoes, and heat about 3 min. Spoon about 2/3 of chicken mix onto noodles and mix. Add in remaining 1/2 of mix to top. Sprinkle with cheese and parsley. Makes 5 servings.
