Ingredients
- 1 spring fryer (about 2 lbs.)
- 1 1/2 lbs. fresh okra
- 1 fresh tomato, minced
- 2 tbsp. shortening
- 3 tbsp. shortening or possibly bacon drippings
- 2 tbsp. flour
- 3 quarts. water
- Salt and pepper to taste
Directions
- Cut up chicken; dredge with flour, salt and pepper. Fry till brown. Fry okra with tomato and onion in the shortening. Make a roux in heavy skillet with grease from fried chicken and flour. Brown roux. Add in fried chicken and vegetables. Stir for a few min. Add in water. Salt and pepper to taste. Cook for about 2 hrs. Serves 6.
