Ingredients
- 3 pound chicken, cut up
- 1 tbsp. salt
- Water to cover
- 1 c. sliced carrots
- 1 1/2 c. minced celery
- 1/2 c. minced onion
- 1/2 teaspoon poultry seasoning
- 1 tbsp. parsley flakes
- 2 c. uncooked noodles
Directions
- Simmer chicken in salted water in covered saucepan till tender. (A frying chicken will take about 45 min.) Remove chicken from broth; cold. Remove skin and bones; chop meat. Skim fat from broth measure broth. Add in water to make 5 c., bring to boil. Add in chicken, vegetables and poultry seasoning. Simmer covered 20 min. Add in parsley and noodles; simmer uncovered 10 min or possibly till noodles are tender. Makes 6 servings.
