Ingredients

  • 1 1/2 pound boneless, skinned chicken, cut in 1" pcs
  • 1 lg. onion, minced
  • 2 chopped garlic cloves
  • 1 (16 ounce.) can stewed tomatoes
  • 3 med. carrots, peeled & sliced (1 1/2 c.)
  • 1 (8 ounce.) can tomato sauce
  • 1 1/2 teaspoon grnd cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano, crushed
  • 1 (16 ounce.) can kidney beans (rinsed & liquid removed)
  • 1 lg. green pepper cut into 3/4" pcs

Directions

  1. Cook chicken, onion and garlic in oil in Dutch oven till chicken loses its pink color. Add in remaining ingredients except green pepper. Reduce heat and simmer 15 min. Add in green pepper and continue to simmer till carrots and green pepper are tender. About 10 min. Variation: I substitute 1/2 c. salsa for tomato sauce.
