Ingredients

  • 1/4 c. Dijon mustard
  • 1/4 c. whole seed mustard
  • 1/4 c. warm German mustard
  • 1/4 c. distilled white vinegar
  • 1/4 c. extra virgin olive oil
  • 1/2 c. unsweetened apple juice
  • Juice of 1/2 lemon
  • 1 whole shallot, sliced in rings
  • Freshly grnd pepper
  • chicken cutlets

Directions

  1. Combine all ingredients in a bowl. Whisk to emulsify, Marinate chicken cutlets 1 to 3 hrs (or possibly more) before grilling.
  2. Grill chicken over medium-warm coals, cook the chicken 6 to 7 min per side. Spoon the marinade over the grilled chicken as a sauce, if you like.
