,%20and%20we%20used%20dried%20herbs%20(for%20shame,%20I%20know).%20The%20chicken%20(we%20used%20bone-in,%20skin-on%20thighs)%20was%20cooked%20perfectly%20and%20was%20tender%20and%20juicy.%20The%20sauce%20was%20sweet%20and%20tart%20and%20made%20the%20house%20smell%20wonderful.%20We%20served%20it%20with%20basmati%20rice%20that%20we%20cooked%20in%20a%20rice%20cooker%20with%20a%20few%20shakes%20of%20ground%20cardamom,%20then%20we%20garnished%20the%20plate%20with%20some%20pomegranate%20seeds.%20Here's%20our%20slightly%20adapted%20version%20of%20Mrs.%20Latif's%20recipe.%20It's%20a%20great%20dish%20for%20fall,%20when%20pomegranates%20are%20in%20season.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ETurn%20the%20oven%20on%20to%20400%20degrees.%20Lay%20the%20chicken%20thighs%20in%20a%20glass%20baking%20dish%20and%20season%20them%20with%20salt,%20pepper%20and%20a%20light%20sprinkling%20of%20hot%20paprika.%20Roast%20the%20chicken%20uncovered%20at%20400%20for%2020%20minutes.%20Then%20reduce%20the%20heat%20to%20325%20and%20continue%20to%20bake%20for%20thirty%20minutes%20more.%20When%20the%20chicken%20has%20only%20about%2010%20minutes%20left%20to%20cook,%20prepare%20the%20sauce.%20Saute%20the%20onion%20and%20garlic%20in%20the%20olive%20oil%20unti%20golden,%20stirring%20frequently.%20Add%20the%20tomato%20chunks%20and%20the%20parsley%20and%20cilantro.%20Simmer,%20covered,%20for%20about%20five%20minutes.%20Add%20the%20pomegranate%20molasses,%20stir%20well,%20and%20simmer%20for%20five%20minutes%20more.%20At%20the%20end%20of%20the%20roasting%20time,%20remove%20the%20chicken%20from%20the%20oven%20and%20remove%20the%20fat%20from%20the%20pan.%20Pour%20the%20pomegranate%20sauce%20over%20the%20chicken%20as%20evenly%20as%20possible,%20then%20return%20the%20chicken%20to%20the%20oven%20for%20ten%20minutes.%20Finally,%20place%20the%20chicken%20on%20the%20top%20rack%20and%20broil%20for%203-4%20minutes.%20Enjoy%20with%20rice%20or%20another%20Middle%20Eastern%20side%20dish.%3C/p%3E){kind=link}
