Ingredients
- 1/3 c. nonfat yogurt plain
- 3 x minced green onions
- 6 x strips lime peel coarsely minced
- 4 x cloves garlic peeled & crushed
- 2 tsp coriander crushed
- 1 tsp grnd cumin
- 1/2 tsp caraway seed
- 1 tsp grnd black pepper
- 1/2 tsp salt
- 6 x boneless skinless chicken breast halves
Directions
- In a large bowl, combine all ingredients except chicken, mixing well.
- Roll chicken pcs in mix and arrange in stainless steel broiler pan. Cover with plastic wrap and marinate at room temperature for 1 hour (or possibly chill and marinate overnight).
- At cooking time, preheat boiler. Pour off all but 1/4 c. marinade and throw away.
- Place pan of chicken under preheated broiler, 6 to 8 inches from the heat. Broil chicken 5 min on each side, then slice on diagonal and serve equivalent of 1 chicken breast half per person.
- Makes 6 servings.
