Directions

  1. In large skillet, brown chicken lightly in oil then drain fat; sprinkle with salt and pepper. Add in vegetables, broth, 1/4 tsp. salt; cover and simmer 15 min. Blend flour and lowfat milk and stir into skillet mix till slightly thickened.
  2. Spoon dumplings over top. Continue to simmer 10 min uncovered, then for 10 min covered.
  3. Dumplings: Sift together one c. sifted all-purpose flour, 2 tsp. baking pwdr, and 1/2 tsp. salt into mixing bowl. In measuring c. add in 3 Tbsp. oil to 1/2 c. lowfat milk; stir all at once into flour mix till well but lightly blended.
  4. NOTE: Dumpling recipe on Bisquick box is also ideal for this.
