Chicken Florientine Soup

This is a delicious creamy soup with chicken and spinach.. i serve it with italian style croutons on top. My family loves this recipe.

Ingredients

  • 1lb chicken breasts poached in simmering water.
  • 4 oz Frozen chopped spinach drained
  • 1 2 oz jar of pimentos chopped
  • 4T butter
  • 4T flour
  • 2c chicken broth
  • 2c half and half
  • 1 clove garlic minced
  • salt and pepper to taste

Directions

  1. [] poach 1b chicken breasts in simmering water 20 min. cool and cut in cubes set aside.
  2. Drain 4 oz chopped frozen spinach set aside
  3. Over medium heat add butter to 5quart saucepan . when melted add flour cook 2 min. add chicken broth whisking until it starts to thicken.
  4. add half and half, garlic minced, frozen spinach, jar of pimentos, and last the reserved chopped chicken. add sat and pepper to taste, stir well. continue to cook over medium heat. 20 min. serve with italian style croutons enjoy
