  • 6 Precooked chicken drumsticks
  • 3/4 16 oz. jar sweet red-pepper slices about one cup
  • 2 15 to 16 oz. cans black beans -- rinsed and drained
  • 1 16 oz. can whole-kernel corn -- drained
  • 3 tablespoons fresh cilantro -- chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon black pepper
  • 1 small head Boston lettuce

Directions

  1. Cook drumsticks.
  2. Remove red-pepper slices from jar and cut into 1/4-inch-wide strips. Place pepper strips in large bowl; add 2 tablespoons of liquid from jar. With rubber spatula,gently stir in black beans,corn,chopped cilantro, lime juice, olive oil, honey, and black pepper.
  3. Arrange Boston lettuce leaves on dinner plates. Spoon bean salad on top of lettuce. Arrange roasted chicken on plate with salad.
