Ingredients
- 6 Precooked chicken drumsticks
- 3/4 16 oz. jar sweet red-pepper slices about one cup
- 2 15 to 16 oz. cans black beans -- rinsed and drained
- 1 16 oz. can whole-kernel corn -- drained
- 3 tablespoons fresh cilantro -- chopped
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1/2 teaspoon black pepper
- 1 small head Boston lettuce
Directions
- Cook drumsticks.
- Remove red-pepper slices from jar and cut into 1/4-inch-wide strips. Place pepper strips in large bowl; add 2 tablespoons of liquid from jar. With rubber spatula,gently stir in black beans,corn,chopped cilantro, lime juice, olive oil, honey, and black pepper.
- Arrange Boston lettuce leaves on dinner plates. Spoon bean salad on top of lettuce. Arrange roasted chicken on plate with salad.
