Ingredients

  • 4 x Skinless boneless chicken breast, about 7 ounce. each
  • 1 can (15-16 ounce) garbnzo beans, rinsed, liquid removed
  • 1 sm Onion, thinly sliced
  • 1 sm Red bell pepper, minced
  • 1 c. Snap pea pods
  • 9 ounce Jar mango chutney
  • 3/4 c. Water
  • 2 Tbsp. Cornstarch
  • 1 1/2 tsp Curry pwdr, (to 2 teaspoon to taste)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 4 c. Warm cooked rice

Directions

  1. Layer chicken, beans, onion, bell pepper and pea pods in 3 1/2-4 qt crock pot.
  2. Mix remaining ingredients except rice; pour over mix in slow cooker.
  3. Cover and cook on Low heat setting 6-7 hrs or possibly till vegetables are tender and juice of chicken is no longer pink when centers of thickest pcs are cut. Serve over rice.
  4. Serve with condiments such as: shredded coconut, minced peanuts, lime soaked banana slices, raisins and grated Large eggs.
  5. Makes 4 servings.
