Ingredients
- 4 x Skinless boneless chicken breast, about 7 ounce. each
- 1 can (15-16 ounce) garbnzo beans, rinsed, liquid removed
- 1 sm Onion, thinly sliced
- 1 sm Red bell pepper, minced
- 1 c. Snap pea pods
- 9 ounce Jar mango chutney
- 3/4 c. Water
- 2 Tbsp. Cornstarch
- 1Â 1/2 tsp Curry pwdr, (to 2 teaspoon to taste)
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 4 c. Warm cooked rice
Directions
- Layer chicken, beans, onion, bell pepper and pea pods in 3 1/2-4 qt crock pot.
- Mix remaining ingredients except rice; pour over mix in slow cooker.
- Cover and cook on Low heat setting 6-7 hrs or possibly till vegetables are tender and juice of chicken is no longer pink when centers of thickest pcs are cut. Serve over rice.
- Serve with condiments such as: shredded coconut, minced peanuts, lime soaked banana slices, raisins and grated Large eggs.
- Makes 4 servings.
