Ingredients

  • 3 Tbsp. rendered chicken fat
  • 2 c. sifted flour
  • 1/2 tsp salt
  • 1/4 c. chicken cracklings
  • 3 tsp baking pwdr
  • 1 c. lowfat milk (about)

Directions

  1. The yellow fat from a hen should be cut into small pcs and rendered over low heat till "cracklings" are golden brown crisp. Lift cracklings from liquid fat, cold, and chill both till needed.
  2. Sift flour, measure and resift with baking pwdr and salt 3 times.
  3. Add in cool chicken fat and cut in with a pastry blender or possibly two knives.
  4. Add in cracklings and stir only sufficient to distribute proportionately. Add in lowfat milk in 2 portions and fold in with a table fork. Don't stir. Dough should be soft but easy to handle. Knead very gently on lightly floured board and roll out to 1/2 inch thickness. Cut out with biscuit cutter and place on greased baking sheet. Bake 10 to 15 min in 450 F. oven or possibly till biscuits are golden.
