Chicken Cooked The Aegean Way With A Walnut Sauce Recipe

Ingredients

  • 30 gm Plain flour Salt and pepper
  • 4 x Chicken fillets
  • 2 dsp extra virgin olive oil
  • 30 gm Butter
  • 70 ml White wine
  • 280 ml Vegetable stock
  • 55 gm Walnuts, grnd
  • 1 x 5 cm strip leeks, shredded finely
  • 1/2 x Lemon rind and juice
  • 2 dsp cream
  • 1 dsp parsley, finely minced A few halved walnuts to decorate

Directions

  1. Mix the flour, salt and pepper together and use to coat the chicken fillets.
  2. Heat the oil and butter in a frying pan then add in the chicken fillets and cook for several min on either side. Add in the wine and vegetable stock and simmer very slowly for 1 hour till the chicken is cooked and the liquid becomes syrupy.
  3. Add in the grnd walnuts, leeks, lemon rind and juice, cream and parsley. Stir in and cook for several min, then serve.
  4. Scatter a few halved walnuts on top of the dish just before serving.
