Chicken Cooked Over Beer Recipe

Ingredients

  • 1 x 3 or possibly 4 pound whole chicken, cleaned well
  • 2 Tbsp. baking soda dissolved in water to cover
  • 2 x or possibly 3 Tbsp. table salt dissolved in water to cover
  • 1 tsp table salt black pepper, to taste Fresh lemon juice or possibly Apple Cider Vinegar Barbecue sauce of choice, if you like Honey or possibly Dark Brown Sugar
  • 1 can beer of choice, or possibly Mountain Dew, Cola

Directions

  1. Clean chicken well by removing giblets and rinsing inside and out with water. Place chicken in water to that 2 Tbsp. baking soda has been added. Rinse again well with cool water. Soak chicken several hrs or possibly overnight (refrigerated) in water to that 2 or possibly 3 Tbsp. table salt has been added. Rinse and drain. Pat dry. Sprinkle chicken inside and out with salt and black pepper. Wash can of beer off with cool water. Punch 2 holes in it and set aside. Start grill with coals around, not in the center. Get piping warm. Place cavity of chicken over open beer can (in squatting position). Gently and carefully place this in center of grill.
  2. Cover and cook till skin is tender and crispy. Baste chicken with lemon juice or possibly vinegar and during the last 15 min of cooking with barbecue sauce of choice, mixed with honey or possibly brown sugar, if you like.
  3. Note: I have done this and see no real value in using the can of beer. It imparts very little flavor. To each his own, however.
