Ingredients

  • 100 each Chicken pieces. 8 cutes
  • 5 lbs All-purpose Flour
  • Creole Seasoning. recipe follos
  • 1 qt Olive oil
  • 10 lbs Large Spanish Onions, chopped.
  • 2 Tbsp Salt
  • 1 Tbsp Crushed Red Peppers
  • 5 lbs Sliced Mushrooms
  • 1 cup Chopped Garlic
  • 3 Gallons White Wine
  • 3 cans Diced Tomatos (#10 cans)
  • 3 cans Tomato Puree (#10 cans)
  • 6 Gallons Chicken Stock
  • 10 Leaves Bay Leaves
  • 2 bunches Springs Fresh Thyme, whole
  • 3 bunches Chiffonade Basil
  • Grated parmesan
  • Chopped Fresh Parsley

Directions

  1. Season the chicken with Creole seasoning.
  2. Season the flour with Creole seasoning.
  3. Dredge the chicken in the seasoned flour, cooating completelly and shaking off the excess.
  4. In the tilt grill, on medium-high heat, add oil.
  5. When the oil is hot, add the chicken and brown forr 3 to 4 minutes on each side.
  6. Remove the chicken and set aside.
  7. Bring Mixture to a boil. Stir in the bay leaves, thyme and basil.
  8. Add the chicken back to the mixture.
  9. Reduce the heat to medium and cover.
  10. Simmer for 1 hour or until tender.
  11. Garnish pan with parmesan and chopped parsley.
