Ingredients
- 2 tablespoons olive oil (lemon-infused or plain)
- 1 tablespoon sherry vinegar
- 1 clove garlic, minced
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground cumin
- 3 cups baby spinach
- 2/3 cup thinly sliced fennel bulb
- 2/3 cup carrots, sliced into thin matchsticks
- 3-4 radishes, halved and thinly sliced
- 1/3 cup cilantro leaves
- 4 ounces shredded cheddar cheese (I use Cabot Seriously Sharp)
- 2 large flatbread wraps (I use Flatout)
- 4 ounces grilled chicken, cut into strips or chunks

%20chicken%20salad%20sandwich.%20No%20gloppy%20mayo%20here%20--%20just%20loads%20and%20loads%20of%20crisp%20fresh%20veggies,%20tossed%20in%20a%20light%20vinaigrette.%20With%20some%20grilled%20chicken,%20if%20being%20a%20meatasaurus%20like%20The%20Ninj%20is%20how%20you%20roll.%3C/p%3E%3Cp%3EI%20have%20a%20mental%20block%20against%20eating%20sandwiches%20for%20dinner.%20I%20know,%20it's%20silly.%20I%20mean,%20I%20will%20happily%20scarf%20down%20a%20gigantic%20burger%20for%20dinner%20yet%20a%20burger%20is%20basically%20a%20sandwich,%20right?%3C/p%3E%3Cp%3EMaybe%20it's%20a%20hot%20versus%20cold%20thing.%20Burgers%20are%20hot,%20sandwiches%20(usually)%20are%20not,%20and%20I'm%20still%20super%20old-school%20in%20being%20biased%20toward%20a%20hot%20dinner%20and%20a%20cold%20lunch.%3C/p%3E%3Cp%3EBut%20these%20chicken-and-salad%20sandwiches%20have%20changed%20my%20mind.%20I%20never%20thought%20I'd%20describe%20a%20veggie-packed%20sandwich%20as%20hearty%20and%20filling,%20but%20this%20one%20is,%20as%20it's%20loaded%20with%20crisp,%20crunchy%20veggies%20like%20fennel,%20radishes%20and%20carrots.%20And%20it%20makes%20total%20sense:%20why%20eat%20a%20side%20salad%20with%20your%20sandwich%20when%20you%20can%20just%20eat%20the%20salad%20as%20part%20of%20the%20sandwich?%20WITH%20MELTY%20CHEESE?%3C/p%3E%3Cp%3EYes,%20there's%20melted%20cheese%20(I%20mean,%20really%20--%20of%20course%20there%20is%20melty%20cheese).%20A%20nice%20sharp%20cheddar%20not%20only%20adds%20extra%20punch%20and%20charm%20to%20the%20sandwich,%20it%20also%20serves%20as%20the%20glue%20that%20holds%20everything%20in%20place.%20Which%20sets%20the%20sandwich%20apart%20from%20a%20taco.%20Genius.%3C/p%3E%3Cp%3EAlthough%20it's%20not%20quite%20my%20genius.%20The%20inspiration%20for%20these%20chicken-and-salad%20sandwiches%20was%20an%20Alice%20Water's%20recipe%20for%20garden%20salad%20tacos,%20so%20you%20can%20bet%20it's%20healthy.%20I%20just%20fiddled%20around%20with%20the%20recipe%20until%20it%20was%20more%20to%20my%20liking,%20largely%20because%20I'm%20not%20a%20fan%20of%20falling-apart%20tacos%20--%20I%20like%20a%20tidy%20meal,%20not%20one%20that%20gets%20all%20over%20my%20hands%20and%20my%20lap.%20Although%20my%20dogs%20definitely%20prefer%20that%20I%20eat%20that%20kind%20of%20meal.%3C/p%3E%3Cp%3EI%20use%20flatbread%20wraps%20for%20these%20sandwiches%20because%20they're%20thin%20and%20easy%20to%20fold.%20If%20you'd%20prefer%20to%20eat%20the%20sandwich%20open-faced,%20more%20like%20a%20pizza,%20you%20could%20use%20naan%20and%20not%20fold%20it%20over.%20%20For%20a%20meatless%20version,%20simply%20omit%20the%20chicken%20or%20stir%20in%20some%20rinsed%20cannellini%20beans.%20Lastly,%20if%20you're%20more%20into%20the%20taco%20thing%20than%20I%20am,%20wrap%20the%20chicken%20and%20salad%20inside%20a%20burrito-sized%20flour%20tortilla.%3C/p%3E%3Cp%3EJust%20be%20prepared%20to%20lick%20your%20fingers.%20Or%20have%20your%20dog%20on%20standby%20to%20clean%20up%20your%20lap.%3C/p%3E%3Cp%3EChicken%20and%20Salad%20Sandwiches%3C/p%3E%3Cp%3E(Inspired%20by%20an%20Alice%20Waters%20recipe%20in%20Food%20and%20Wine)%3C/p%3E%3Cp%3EI%20like%20to%20use%20Calivirgin's%20Lusty%20Lemon%20olive%20oil%20in%20the%20vinaigrette%20--%20if%20you%20don't%20have%20any%20lemony%20olive%3C/p%3E%3Cp%3Eoil%20but%20still%20want%20a%20little%20lemon%20flavor,%20just%20squeeze%20in%20some%20fresh%20lemon%20juice.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20broiler.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20whisk%20together%20the%20first%20five%20ingredients%20to%20make%20the%20vinaigrette.%20Add%20the%20veg%20(spinach,%20fennel,%20carrot,%20radish%20and%20cilantro)%20and%20toss%20lightly.%3C/p%3E%3Cp%3ELay%20the%20flatbread%20wraps%20on%20a%20baking%20sheet%20and%20sprinkle%20with%20cheese.%20Broil%206-8%20inches%20from%20the%20heat%20until%20the%20cheese%20is%20just%20melted.%20Layer%20the%20chicken%20and%20salad%20onto%20the%20flatbread%20wraps%20and%20fold%20each%20one%20in%20half.%3C/p%3E%3Cp%3Ewww.yankeekitchenninja.com%3C/p%3E){kind=link}
