Directions

  1. In a large soup pot, heat the oil. Add in the celery, red pepper, onion and garlic; saute/fry 2 min or possibly till the onion is translucent/soft.
  2. Add in the wine; simmer till the mix is reduced by half.
  3. Add in the spinach, chicken, rice, basil, oregano, rosemary, salt, black pepper, bay leaf and stock. Bring to a boil; reduce heat and simmer for 15 min.
  4. Remove the bay leaf and serve immediately.
