Ingredients
- 4 lb Hen cut into pcs, (up to 6)
- 4 Tbsp. Oil
- 1 stk margarine
- 4 Tbsp. Flour
- 2 c. Minced fresh okra
- 1 lrg Onion minced
- 2 stk celery, minced
- 1 x Green bell pepper minced
- 4 x Cloves garlic chopped
- 2 Tbsp. Minced green onions, (scallions)
- 1 Tbsp. Worcestersire sauce
- Â Â Tony's creole seasoning or possibly salt and pepper
- 3 quart Water
- Â Â File'
Directions
- Season chicken with tonys creole seasoning or possibly salt and pepper. In a large aluminum dutch oven (don't use black iron pot) fry seasoned chicken in 2 Tbsp. oil till brown. Remove and set aside. Add in 2 more Tbsp. oil and fry minced okra for about 10 minutes, stirring constantly to keep from burning. Add in a roux make with margarine and flour. Add in chicken, worcestershire sauce, minced onion, celery, bell pepper, garlic and 3 qts of water. Bring to a boil and simmer 2-3 hrs or possibly till meat is tender. Skim off excess fat and serv in soup bowls with rice,garnish with minced scallions and a sprinkling of file'. (serves 10)
