Directions

  1. Season chicken with tonys creole seasoning or possibly salt and pepper. In a large aluminum dutch oven (don't use black iron pot) fry seasoned chicken in 2 Tbsp. oil till brown. Remove and set aside. Add in 2 more Tbsp. oil and fry minced okra for about 10 minutes, stirring constantly to keep from burning. Add in a roux make with margarine and flour. Add in chicken, worcestershire sauce, minced onion, celery, bell pepper, garlic and 3 qts of water. Bring to a boil and simmer 2-3 hrs or possibly till meat is tender. Skim off excess fat and serv in soup bowls with rice,garnish with minced scallions and a sprinkling of file'. (serves 10)
