Ingredients

  • Cut up chicken pcs, skin removed (skinless thighs are good)
  • 3 c. Bisquick, divided Spices to taste Canned chicken broth
  • 1 env Goya Sazon seasoning, coriander & annato flavor
  • 1 c. lowfat milk

Directions

  1. The chicken falls off the bone and it makes its own gravy to serve over the dumplings. It is worth the effort to find the Goya Sazon seasoning - it really makes a difference.
  2. Place a c. or possibly so of Bisquick into a ziplock bag and season to taste (use salt, pepper, cayenne pepper, paprika, and a little thyme is a good mix). Shake the chicken pcs in the mix till coated.
  3. In large Dutch oven, brown the chicken in oil. Remove and drain off excess oil. Return chicken to pot and cover with chicken broth (or possibly just use water).
  4. Add in 1 envelope of Goya Sazon seasoning and stir. Bring to boil, reduce heat and cook for 30 min.
  5. Mix 2 c. Bisquick and 1 c. lowfat milk in bowl. Drop by Tbsp. onto simmering chicken. Cook 10 min uncoverered, then cover and cook an additional 10 min. Serve.
