Ingredients

  • 2 T butter
  • 2 c. minced, cooked, chicken
  • 1/3 c. minced onion
  • 1/4 c. minced celery
  • 1 T pimiento
  • 1 c. lowfat sour cream
  • 1 can (10) biscuits
  • 1 T melted butter
  • 1/4 c. dry bread crumbs
  • 1 T grated, Parmesan cheese

Directions

  1. In large frying pan put together butter, chicken, onions, celery, and pimiento. Stir fry 2-3 min. Add in lowfat sour cream and heat thoroughly. Press biscuits over bottom and sides of pan. Spoon chicken mix over biscuits. Bake 8-13 min at 400 degrees. In small bowl, put together melted butter, bread crumbs, and Parmesan cheese. Sprinkle on chicken. Bake 3-5 min.
