Ingredients

  • 3/4 c. Firmly packed brown sugar
  • 1/2 c. Granulated sugar
  • 4 Tbsp. Margarine
  • 3/4 c. Apple butter* or possibly apple sauce
  • 2 x Egg whites or possibly 1 egg
  • 2 Tbsp. Skim lowfat milk
  • 2 tsp Vanilla
  • 1 1/2 c. All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Grnd cinnamon
  • 1/2 tsp Salt, (optional)
  • 1/4 tsp Grnd nutmeg, (optional)
  • 3 c. QUAKER Oats (quick or possibly old fashioned, uncooked)
  • 1 c. Raisins or possibly diced dry mixed fruit

Directions

  1. Heat oven to 350iF. Beat together sugars and margarine till well blended.
  2. Add in apple butter, egg whites, lowfat milk and vanilla; beat well. Add in combined flour, baking soda, cinnamon, salt and nutmeg; mix well. Stir in oats and raisins; mix well. (Dough will be moist.) Spread dough onto bottom of ungreased 13x9-inch baking pan. Bake 25 to 30 min or possibly till edges are light golden. Cold completely before cutting into bars. Store tightly covered.

  4. Apple butter is usually available in your supermarket's jam & jelly section.
  5. Note: For a no-fat-added cookie, omit margarine and increase apple butter to 1 c.; and continue as recipe directs.
