Ingredients

3 1/2 c. All-purpose flour
1/2 tsp Salt
1 1/2 tsp Baking soda
1 c. Unsweetened applesauce
1 c. Crunchy peanut butter
2 1/2 c. Brown sugar firmly packed
2 x Egg whites
2 tsp Vanilla

Directions

1. In small bowl, combine flour, salt and soda; set aside.
2. Thoroughly mix together remaining ingredients. Add in dry ingredients, mixing till combined. Drop by rounded measuring tablespoonfuls onto cookie sheets coated with no-stick cooking spray.
3. Bake in 375 F. oven about 10 min or possibly till light golden.
Cold on wire racks.
Yield: 5 dozen cookies, 2 1/2-inches in diameter.
