Relish ingredients.
Mise En Place for relish.
Emulsify dressing ingredients.
Relish can be made ahead of time and refrigerated.
Preheat smoker to 250^
Rinse, clean and dry trout
Season and top with slivered almonds.
Load trout into smoker.
Smoke 25-30 minutes until done.
I served the trout with smoked stuffed Vidalia onions, brown rice and a salad.
