Cherry, Coconut & Honey Frozen Yogurt is a healthy summertime frozen treat.

Healthy eating or no healthy eating, summer just isn’t complete without multiple doses of frozen desserts. Pick your poison – sorbet, ice cream or frozen yogurt. Of course, if you choose something that is low fat and low sugar, then you can eat more. That’s the way it works, right? This frozen yogurt has a light taste of coconut and a blast of cherries and honey without masking the tang of the Greek yogurt.

This dessert recipe rounds out the summer barbecue meal that I paired up with OXO Good Grips to bring you over the past couple of weeks. It kicked off with a Fresh Strawberry & Lime Tom Collins Cocktail, then happily tripped over to the grill with a Mixed Grill with Sausages, Mini Peppers & Zucchini.

If you cook or bake with cherries at all, you’re well-versed with the necessity of a good cherry pitter. Sure, you could use the “shove the chopstick through the cherry until the pit pops out” trick. But really, why not spend a few bucks and buy a cherry pitter? OXO’s version is, not surprisingly, brilliantly designed. In the space where the pit is released from the cherry, OXO included a mini splash guard (see the photo below). If you’ve ever pitted cherries while wearing your favorite white shirt (ahem), you just let out an exclamation of “How brilliant”, didn’t you?

When I mentioned “low fat” earlier, I really meant it. A half-cup of this frozen yogurt contains just 2.9 grams of fat and 136 calories. Even if you doubled the serving size, the numbers still add up to a healthy dessert option. My husband and I really like the slightly tart flavor. However, if you prefer a little more sweetness, drizzle some honey over top.

The recipe:

In a large bowl or measuring pitcher (for easy pouring), whisk together the coconut milk, Greek yogurt and honey. Cover and refrigerate for 1 hour.

Place 3/4 of the pitted cherries in the blender and blend until almost smooth. Stir the pureed mixture into the yogurt mixture.

Pour the yogurt mixture into an ice cream maker and process according to the manufacturer’s instructions.

Chop the remaining cherries. When the frozen yogurt is almost finished processing, add the chopped cherries to the mixture and finish processing.

Serve immediately or place in the freezer in an airtight container. If you freeze the mixture, warm it at room temperature for about 1 hour before serving.
