A delicious berry muffin filled with oats.
Ingredients
- 1-1/4 cup plus 1 tablespoon flour, divided
- 1 cup old fashioned oats
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 tsps baking powder
- 1/4 tsp salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup cherries, pitted and halved
- 1/2 cup blueberries
Directions
- Preheat oven to 350 degrees. Line muffin pan with baking cups.
- In a large bowl, mix the 1-1/4 cup of flour, sugars, baking powder and salt.
- In a medium bowl, mix the buttermilk, oil, eggs and vanilla. Pour into flour mixture just until combined.
- Toss cherries and blueberries with 1 tablespoon flour and fold into batter.
- Divide batter evenly into muffin cups.
- Bake for 25 minutes.
