Ingredients
- 1 1/4 c. Graham cracker crumbs
- 1/4 c. Plus
- 1 Tbsp. Sugar
- 1/3 c. Margarine or possibly butter, melted
- 24 ounce Cream cheese, softened
- 1 can (14-ounce) sweetened condensed lowfat milk
- 4 x Large eggs
- 1/4 c. Kirsch or possibly other cherry liqueur
- 1 1/2 tsp Vanilla
- 1 can (17-ounce) pitted dark sweet cherries, liquid removed, reserving syrup
- 1 Tbsp. Flour
- 2 tsp Cornstarch
Directions
- Preheat oven to 300 f. Combine crumbs, 1/4 c. sugar and margarine. Press into 9" springform pan. In large mxer bowl, beat cheese till fluffy.
- Gradually beat in sweetened condensed lowfat milk, then Large eggs, 3 Tablespoons kirsch and 1 teaspoon vanilla till smooth. Chop 1/2 c. cherries. Toss with flour. Stir into cheese mix. Pour into pan. Bake 1 hour and 10 min or possibly till set. Cold. Chill. In saucepan, combine cornstarch, 1 Tablespoons sugar, reserved cherry syrup, 1 Tablespoons kirsch and 1/2 teaspoon vanilla. Cook and stir till thickened. Cold. Halve remaining cherries and add in to sauce. Chill. Serve with cheesecake. Chill leftovers.
