Cheezy garlic Chicken and Mashed potatoes Recipe

This is such a favorite that I make it as a requested birthday dinner for just about everyone! Big hit with my mother and father-in-law as well!! This recipe is for 6 people, but trust me, none will go to waste!

  1. Heat oven to broil
  2. Put potatoes to boil in large pot of water until tender
  3. Make into mashed potatoes using chicken broth and 2 cloves of fresh chopped garlic
  4. rinse and pat chicken breasts dry
  5. On stove heat canola oil in cast iron skillet ( used for frying)
  6. In a large bowl whisk wet ingredients together, put chicken in
  7. Julienne slice bell peppers
  8. Evenly sprinkle 2 cups of cheese and bell peppers in a 9 by 13 baking dish, set aside
  9. Remove chicken from liquid and coat with flour mixture and fry until golden brown and drain extra oil.
  10. Place baking dish under broiler until cheese melts, pull
  11. out of oven, and alternately place chicken and mashed potatoes in pan ( this will look like "servings") over melted cheese.
  12. Sprinkle entire dish with the rest of the cheese and place back under broiler until cheese is golden bubbly.
  13. Serve and enjoy!

    While this dish sounds delicious, given the ingredients listed, I am having trouble visualizing just how it is supposed to be assembled in the pan. It's probably just me making things more complicated than they need to be, but the next time you make it, could you, perhaps, take a few step-by-step photos to help me out with this?
    Do the mashed potatoes go on top of the chicken, or side-by-side?

      I will do that A.L., I put it in the dish a chicken breast and a helping of mashed potatoes, a chicken breast and a helping of mashed potatoes.. alternating so when you serve it, it is already pre-portioned. But I will take pictures, I am making it very soon, my mothers birthday is the 17th! ;)
