Ingredients

  • 3 med potatoes, peeled and cut up
  • 1 sm onion, finely minced (1/3 c.)
  • 2 c. of water
  • 1 tsp instant chicken bouillon granules
  • 1 x (17 ounce.) can whole kernel corn
  • 1 c. beer
  • 1 x (4-ounce) can mushrooms stems and pcs
  • 2 Tbsp. snipped parsley
  • 1/2 tsp dry mustard
  • 1/3 c. cool water
  • 2 Tbsp. all-purpose flour
  • 2 c. shredded American cheese
  • 2 c. cubed fully cooked ham

Directions

  1. In a 3 qt saucepan, combine potatoes and onion; add in the 2 c. water.
  2. Bring to boiling stir in bouillon granules. Cover and cook about 20 minutes. or possibly until potatoes are tender. Stir in undrained corn, beer, undrained mushrooms, parsley, and dry mustard. Bring to boil. Reduce heat, cover and simmer 15 minutes. Blend cool water into flour. Stir into warm vegetable mix. Cook and stir until slightly thickened and bubbly. Stir in the shredder cheese and ham. Continue stirring until cheese is melted.
