Are there certain foods that you are just pretty much obsessed with? Oh come on, I know there is! You don’t need to hang your head in shame and glance the other way. It’s alright, we all have them!

For me, one of them, is Artichoke or Spinach Dip. This obsession started when I went to college and my friends and I found this amazing dip on a restaurant menu about 20 miles from our little, sleepy college town in a “big” city. Since I went to college with a bunch of foodies we were well known for our trips to this restaurant after class just to get this appetizer and have a few beverages. Memories, great memories.

After I moved away and that restaurant is now 3 hours away I’ve been on the search for a dip to replace that one I hold up on a pedestal but it hasn’t really happened. On this quest I’ve found I also have a loved for a chicken sandwich smothered in my beloved dip. That is also a new obsession and love to add to my list. See there’s nothing to be ashamed about if you have a certain food you love! Heck, I have multiple!

On my to do list was create this yummy sandwich at home because then I can have it whenever I want it and let’s get real that’s pretty often! I grabbed my Mezzetta Artichoke Hearts, Savory Garlic Everything Spread, Roasted Red Bell Peppers and got to work creating my recipe! They were so easy to use. No mincing the garlic so my hands didn’t retain that lovely aroma for days and sometimes weeks! I threw the chicken breasts on the grill, mixed up the cheese spread and created my amazing sandwich I had been dreaming about.

It did not disappoint. Every bite was stuffed full of grilled chicken and ooey gooey cheese loaded with garlic, artichokes and a little kick from the bell peppers. Now I can grab me easy to use Mezzetta and whip up my sandwich anytime a craving hits instead of trying to find a restaurant that will please my love!

Cheesy Garlic Artichoke Grilled Chicken Sandwiches

Ingredients

1 loaf Foccacia bread

Instructions

Grill chicken breasts 5-7 minutes on each side or until cooked through.

In a small mixing bowl cream together cream cheese and mayonnaise. Stir in Mozzarella cheese, artichokes, garlic and bell peppers.

Turn heat down to low on grill, leave chicken breasts on the grill and top with artichoke spread. Close cover on the grill and let cheese spread melt, about 5 minutes. Remove chicken breasts from grill, place on sliced Foccacia bread and serve.
