Ingredients

  • 1/2 c. chopped onion
  • 2 cloves garlic, minced
  • 1 1/2 lbs bratwurst, sliced
  • 2 T oil
  • 1 T liquid smoke, optional
  • salt and pepper to taste
  • 4 quarts water
  • 1 can (10-3/4 oz) fiesta cheddar cheese soup
  • 1 can (14-1/2 oz) diced tomatoes
  • 2 cans (14-1/2 oz) chicken broth
  • 1/2 t. dried basil
  • 1/2 t. dried parsley flakes
  • 1/2 t. dried thyme leaves
  • 1-2 t. creole seasoning, or to taste
  • 2-4 t. Tapatio hot sauce, or to taste (or hot sauce of your choice)
  • 16 oz. Velvetta cheese, cubed
  • 1 head fresh cauliflower, steamed and broken into florets
  • 2 cups (8 oz.) shredded Wisconsin sharp cheddar cheese
  • 4 T. cornstarch
  • 1/2 c milk
  • Note: 16 oz. frozen, steamed, cauliflower and be substituted for fresh cauliflower
