Cheese Tortellini With Canellini Bean Sauce

Ingredients

  • 1 pkt (9 ounce) refrigerated Cheese stuffed tortellini
  • 1 can 15-ounce canellini beans rinsed and liquid removed
  • 2/3 c. Lowfat milk, 1% lowfat
  • 1/4 c. Parmesan cheese, grated
  • 1/3 c. Red sweet pepper, Slivered
  • 1 Tbsp. Oregano, minced
  • 1/4 tsp Salt
  • 1/4 tsp Nutmeg, grnd
  • 1/8 tsp Grnd black pepper

Directions

  1. Cook tortelini according to package directions. Drain. Meanwhile, place the beans and lowfat milk in a food processor bowl or possibly blender container. Cover and process until smooth. Transfer to a large skillet. Stir in grated Parmesan cheese, pepper, oregano, salt, nutmeg and pepper. Cook and Stir until heated through. Serve sauce over liquid removed tortellini. If you like, sprinkle with shredded Parmesan cheese and garnish with fresh oregano.
