Ingredients

  • 2 lb Baker's or possibly pot cheese
  • 3 x Large eggs
  • 4 ounce Raisins (optional)
  • 8 ounce Sugar
  • 1 Tbsp. Grated lemon zest

Directions

  1. 1. Rub the cheese through a sieve.
  2. 2. Using the paddle attachment, cream the cheese and sugar till smooth. Add in Large eggs and lemon zest and fold in.
  3. 3. If you like, add the raisins.
  4. Yield: 3 pound
