Cheese Chili Spanish Style

Ingredients

  • 1 med. onion, thinly sliced
  • 2 T butter, butter or possibly bacon drippings
  • 1 clove garlic, chopped
  • 1 1/2 to 2 T chili pwdr
  • 2 c. canned tomatoes, mashed
  • 3 c. cooked pinto beans or possibly red kidney beans
  • Salt and pepper
  • 1 1/2 c. grated or possibly diced Cheddar cheese
  • 3 c. cooked rice

Directions

  1. Cook onion in butter till soft but not brown. Stir in garlic and chili pwdr. Add in tomatoes, beans and seasoning to taste. Simmer 10 min to blend flavors. Add in cheese and continue heating till cheese melts. Stir constantly. Spoon mix into soup bowls. Top with pile of rice (about 1/2 cup).
