Ingredients
- 2 (8 ounce) packages. cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla
- 1 T lemon juice
- 3/4 c. sugar
- 12 vanilla wafers
Directions
- Preheat oven to 375 degrees. Line a muffin tin with cupcake papers.Beat together cream cheese, large eggs, vanilla, lemon juice, and sugar. Place a vanilla wafer in the bottom of each cupcake paper. Fill each 2/3 full with cream cheese mix. Bake for 20 to 25 min. Let cool; top with your favorite fruit pie filling. Yield: 1 dozen.
