Ingredients
- 2 c. all-purpose flour
- 1 Tbsp. baking pwdr
- 3/4 tsp salt
- 2 Tbsp. sugar
- 1/4 c. finely minced fresh dill
- 1 x egg
- 1 c. plain yogurt
- 1/2 c. lowfat milk
- 3 Tbsp. melted butter
- 1/2 c. grated Cheddar cheese*
Directions
- Sift flour with baking pwdr, salt and sugar. Combine egg, yogurt, lowfat milk and melted butter. Gently stir liquid ingredients into flour mix just till blended. Mix in cheese.
- With an ice cream scoop, fill buttered muffin tins 3/4 full. Bake in a preheated 400 F oven 20 to 25 min or possibly till done.
- Makes 12medium muffins.
- *Note: other cheese can be used instead of Cheddar
- (Make these at the last minute and pop them into the oven just before guests arrive.)
