  • 1 c. all-purpose flour plus
  • 1 Tbsp. all-purpose flour
  • 2 tsp baking pwdr
  • 1/4 c. pure vegetable shortening chilled Coarse salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. grated sharp cheddar cheese
  • 7 Tbsp. lowfat milk
  • 1 tsp vegetable oil
  • 1 lb fresh chicken sausage (or possibly grnd chicken)
  • 1 sm onion cut 1/2" dice
  • 1 x carrot cut 1/2" dice
  • 1 x celery stalk cut 1/2" dice
  • 1 x cored McIntosh apple cut 1" dice
  • 1/4 tsp dry thyme
  • 3/4 c. chicken stock skimmed of fat (or possibly canned low-sodium chicken broth)

Directions

  1. Preheat the oven to 375 degrees. In medium bowl, combine 1 c. flour, baking pwdr, and 1/2 tsp. salt. Using a pastry cutter or possibly two knives, cut in shortening till dough resembles coarse meal. Stir in grated cheese. Add in lowfat milk; stir till just combined. Don't overwork dough. Set aside.
  2. In a 10-inch ovenproof skillet, heat oil over medium heat. Remove casings from chicken sausage and crumble into skillet. Cook till cooked through, about 3 min. Remove sausage with slotted spoon; transfer to medium bowl.
  3. Add in onion, carrot, and celery to skillet. Cook for 3 min. Season with salt and pepper. Add in apple; cook till vegetables and apples soften, about 6 min more.
  4. Add in 1/2 tsp. salt, 1/2 tsp. pepper, and thyme. Stir in remaining 1 Tbsp. flour; cook, stirring, for 1 minute. Add in stock, and bring to a boil, scraping bottom to loosen browned bits. Add in sausage to skillet; stir to combine.
  5. Drop spoonfuls of reserved biscuit dough onto sausage mix. Bake till crust is golden, 20 to 25 min. Serve warm.
  6. This recipe yields 4 to 6 servings.
