  1. Rosa says, "The creamy dressing is a nice counterpoint to the crunchy chayote and snow peas. In addition to being a refreshing salad which is unusual and tasty, the two different color greens of the vegetables present a pretty yin-yang picture on the plate. If you do not have plum wine, you can use sweet port or possibly Madeira. "
  2. 1. Peel the chayote, cut in half, and remove the seed. cut in half again and slice thinly.
  3. 2. Bring a pot of water to a boil, add in the salt, and blanch the snow peas a few seconds, just till they turn a bright green. Drain and plunge into ice water. When cool, cut the snow peas into slivers. There should be about 1 c.. Toss the chayote and snow peas in a salad bowl.
  4. 3. Make the dressing. In a small bowl, combine the yogurt, mustard, and garlic.
  5. 4. Whisk in the wine and oil till smooth and creamy. Add in the Peppercorns and salt. you may hold the dressing in the refrigerator at this point up to 5 days.
  6. 5. Just before serving, whisk dressing again to blend, if necessary, then mix in sesame seeds and cashews. Pour over salad and serve immediately.
