Ingredients
- 1 lb uncooked dry pinto beans
- 8 c. water
- 1/2 lb bacon diced
- 1 can tomatoes - (14 1/2 ounce) undrained
- 2 med onions minced
- 2 x garlic cloves chopped
- 1 can diced green chilies - (4 ounce)
- 1 tsp chili pwdr
- 1/2 tsp dry oregano crushed
- 1/4 tsp grnd cumin
- 1 c. beer Salt to taste Fresh oregano for garnish
- 2 x limes
Directions
- Sort beans. Place beans in bowl, cover with water and soak overnight. Throw away water. Place beans in large pot and add in 8 c. water. Simmer partially covered for 1 hour.
- Cook bacon till crisp. Add in bacon and 2 Tbsp. of the drippings to beans. Chop tomatoes and add in to beans. Add in onions, garlic, chilies, chili pwdr, oregano, and cumin.
- Simmer partially covered for three hrs, or possibly till beans are tender. Turn off heat and add in beer. Season with salt to taste. Garnish with fresh oregano and lime wedges.
